<p>In those long ago and far away years when we regularly went to the state fair, the treat we longed for was a &#8220;lemon shake-up.&#8221;  It seemed that even the hottest August day could be defeated by lemons, sugar, and water shaken with ice.  So,  it should be no surprise that when the temperature rises, we turn our  attention just about anything with lemon as a major ingredient.</p>
<p>Both  of our children became vegetarians at a fairly young age, so we learned  to prepare meals that would provide appropriate nourishment and taste  good.  A summertime favorite is lemon risotto with fresh peas, accompanied by a green salad.</p>
<p>Like any good risotto, it all begins with Arborio rice, chopped onions, and olive oil (maybe some butter).  After cooking the onions until they are soft, we add the rice (1 ½ cups for four servings) and stir for a couple of minutes.  Pour in about ¾ cup of good white wine and continue stirring as the rice begins to absorb the liquid.  Then begin to add the stock (we use a vegetable stock, but most recipes call for chicken stock), ¾ cup at a time.  Keep stirring the rice until it is clear that the liquid is being absorbed, and then add more stock.  You  will know when the rice is done because it will have a creamy  consistency. Zest a lemon into the mixture, and add the juice of one or  two lemons (depending on your own taste).   Now is the time to add the peas (fresh or fresh frozen).  Presto&#8230;well not exactly presto; since this can take 15-20 minutes&#8230;you have a wonderful meal for a hot day.</p>
<p>The other day we chose a lovely French white: B&amp;G Vouvray (2009), from the Loire Valley.  The grape is Chenin Blanc.  A floral aroma is followed by ripe white fruit and a bit of melon.  Generally, this is a well-priced wine, too.</p>
<p>So,  cool off tonight by (1) staying inside, (2) chilling a bottle or two of  the B&amp;G Vouvray, and (3) stir-up a lemon risotto with peas.  You won&#8217;t be sorry.</p>

<p>The first time we visited Rome we were not, in the eyes of the parental units, old enough to drink the wine.  Several years later, now married, we returned to Rome, this time without parents, and proceeded to enjoy Rome&#8217;s signature wine, Frascati.  Some of our friends prefer not to even  think about this ubiquitous Roman wine, and in fact, it is rightly thought of as a table wine.  For us, Frascati was love at first sip.</p>
<p>We   continue to visit Italy, after all we have family there, and we drink a   whole variety of Italian wines, depending where we are staying at the   time.  But time and time again, we come back to Frascati as one of our favorite summer wines.</p>
<p>This weekend we will be drinking Tenuta di Pietra Porzia Regillo (Superiore).   The color is like straw we see in the fields near our summer place.  The nose gives up scents of pears and peaches, and on the palate there is more fruit and a touch of citrus.  The wine feels round and generous in the mouth.  And, as one would expect, this is a wine that can be enjoyed without dipping into the grandchildren&#8217;s trust funds.</p>
<p>Here is what we plan for dinner.  We take salmon fillets and marinate them in lime juice, olive oil, fresh oregano and thyme, and a bit of honey.  When the grill is ready we&#8217;ll salt/pepper the fillets and give them about 4 minutes on each side.  We&#8217;ll serve them on a bed of julienned carrots, yellow squash, and green peppers, which have been steamed and seasoned.  You might want to add some steamed fingerling potatoes that have been tossed in lemon and butter as well.</p>
<p>Perhaps we should prepare something more &#8220;Roman&#8221; to go with the Frascati.  Maybe next time.<br />

<p>One of the joys of our summers by the river is having friends over for wine and a bit of food in the early evening.  It   is a gorgeous time of day when the sun casts its rays through the   overhanging branches of trees, leaving a dappled pattern on the grass.  As one would suspect, it can be both warm and humid, so the food is usually fairly light, and the wine well chilled.</p>
<p>By taking a little drive, we can reach a place where &#8211; if we have asked ahead of time &#8211; we can get fresh fish.  For tonight&#8217;s taste bites we decided on a crab spread.  We   put 8 oz. of softened cream cheese into a bowl, added a finely minced   clove of garlic, the juice of a lemon, two tablespoons of chopped fresh   parsley, and a half pound of fresh crab (of course, you can use the   canned variety as well).  Mix it all together, chill, and voila, it is ready to spread on small rounds of Melba toast or pita crackers.</p>
<p>We drink a good deal of Rosé during these warm months.  Tonight we&#8217;ll be serving La Vieille Ferme Cotes du Ventoux Rose 2009.  The   name can be roughly translated as &#8220;the old farm&#8221; which is appropriate   given our summer situation&#8230;except that we&#8217;re not in France.  This is a relatively inexpensive ($10-12) wine, given the quality.  It is made from Grenache and Cinsault grapes grown in the southeastern part of the Rhone.  Its   deep pink color is matched by the floral nose with hints of mango and   strawberry, which are more fully expressed on the palate.  There is a bit of aromatic herb, just a bit, and very nice acidity.</p>
<p>As   the sun begins to set tonight, picture us sitting on the porch,   watching the river flow past at a pretty good clip, a slight breeze,   good conversation, the tasty crab spread, and the mystery of dinner   waiting.</p>

<p>Saturday mornings are a special joy at our house.  We   gather up our shopping bags and head first to Argenta for the Farmers&#8217;   Market there, and then to the Arkansas Sustainability Network&#8217;s market   at Christ Church (Episcopal).  By the time we get home our taste buds are getting aggressive.  This past week we got the freshest possible lettuces, onions, strawberries, mushrooms, and even some early squash.  We never go to these markets with a specific menu in mind.  Rather we let what is available dictate what we cook.</p>
<p>So,   we decided to use the onions, mushrooms and squash as part of a   risotto, which we served along with a lovely green salad, and fresh   strawberries for dessert.</p>
<p>We diced the onions, and sliced the mushrooms.  We cut the squash into small cubes.  After   putting a cup of Arborio rice into about two tablespoons of hot olive   oil, we added a cup of good vegetable (chicken is fine, too) stock, and   stirred until the rice absorbed most of the liquid.  Then we continued to add stock, a bit at a time, until the rice is creamy.</p>
<p>In a skillet we placed a tablespoon each of olive oil and  butter, and then added the onions, cooking until just translucent.   Then we added the mushrooms, and finally the cubed squash.</p>
<p>Finally we combined the vegetables and the rice, adding salt and pepper and the juice of half a lemon to taste.</p>
<p>Of course this now needs a good wine (and that doesn&#8217;t necessarily mean an expensive one).  We chose a 2008 Liberty School Chardonnay (Central Coast).  The fruity nose includes ripe pear.  On the palate the wine is definitely fruit forward, crisp, dry, and with just a hint of oak.  We think it is delicious.</p>
<p>Now   that the farmers&#8217; markets have opened, we can hardly wait for the  first  tomatoes, green peas&#8230;oh no, there go the taste buds talking to  us  again.<br />

<p>Normally  Papa oenophile is writing  the wine  column for the  week; however, he is on vacation and the friendly folks  at McLaren Valley sent  us a sampling of their wines for review. So the  younger family patriarch wine lover will be reviewing this week&#8217;s pick: The Dry Dam Riesling.</p>
<p>We have to say that we have often looked the other way when being introduced to wine from &#8220;down under.&#8221; Our thinking was always: What do Aussies know about making  wine? And we would rather spend our hard earned dollar on the safe bet of the  French who have never made a wine we did not enjoy and have been at it for the  past thousand or so years.</p>
<p>We were pleasantly surprised by this wine. We have also learned  something about Rieslings in the process. Not all Rieslings are the syrupy sweet  wine that your grandmother likes to drink over a game of bridge. Some are  elegant, well balanced and refreshing. This wine is of this ilk. The notation  &#8220;Dry&#8221; on the bottle gives it away.</p>
<p><img src="https://origin.ih.constantcontact.com/fs007/1102026611151/img/476.jpg" border="0" alt="wine" hspace="5" vspace="5" width="80" height="350" align="left" />The  McLaren d&#8217; Arenberg 2010 &#8220;The Dry Dam&#8221; Riesling is light, complex, elegant,  slight fruit with an effervescent  finish. We would recommend this wine  to  anyone as an aperitif;  or as an  accompaniment to any cheese or  seafood dish. It is also an all around easy going  good drinking wine,  just like the  Australians who created it. It is a wine  we would consider purchasing again and  again and adding to our list of  favorites. We hope you will keep an open mind to  the land down under  and to Rieslings and give this wine a try. You will be happy  you did!</p>

<p>One does not have to be a Christian to celebrate Mardi Gras, or &#8220;Fat Tuesday.&#8221;  Tomorrow   is Ash Wednesday in the Christian calendar, the beginning of the  Lenten  fast, so Tuesday is the last day to really indulge for a while  (though  that varies from person to person).  It is our tradition to serve a rich, spicy Jambalaya on Fat Tuesday.  This is the recipe that appears in our cookbook,  <em>Locally Grown, </em>and we&#8217;ve been making it for years.</p>
<p>Sauté a half pound of hot sausage (remove casings if you are using link sausage) in a large pot.  (We prefer enamelized cast iron.)  Add  one large, chopped onion in two tablespoons of olive oil, one green   bell pepper (chopped), and two stalks of chopped celery, and eight   garlic cloves (minced) adding a bit of olive oil as needed.   Cook until tender.</p>
<p>Now   it is time to put three bay leaves, one-half teaspoon of Thyme, one   16-oz can of crushed tomatoes, and one to two cups of chicken stock.  Stir together.  Dice two cups of smoked ham, and add to the mixture.  Cut one pound of chicken breasts into cubes and add, along with one pound of Andouille sausage (sliced) to the pot.  Cook for thirty minutes.</p>
<p>Meanwhile, place one cup of rice and two cups of water into a microwave proof bowl.  Add a bit of oil, cover and microwave on medium for about 20 minutes.</p>
<p>Add the rice to the pot, stir, and voila, you have a great Mardi Gras supper.  Serve along with crusty bread and a green salad.</p>
<p>We chose a 2007 Juan Gil Jumilla red to go with our Jambalaya.  This is a great value red from Spain.  It   has a pretty high alcohol content at fifteen percent, but it is well   balanced, has nice fruit, good tannins, and definitely not sweet.  It is the dark, red berries that we noticed first, and then the spice.  The finish is nice and long, and the wine stood up to the bold flavors of the Jambalaya.</p>
<p>We usually put on colored beads and masks, and finish with either King Cake or bread pudding.  But in truth, Jambalaya is good anytime of the year.  Happy Mardi Gras!</p>

<p><span><span><span><span><span><span><span><span><span><span><span><span><span><span><span><span><span style="font-family: verdana,arial; color: #000000; font-size: medium;">Wedding   anniversary 42, and while we would have enjoyed dining at Forty-Two at  the Clinton Library where we volunteer, we were about 600 miles away.   So instead we ventured to the old Studebaker mansion in South Bend,  Indiana.  It is called &#8220;Tippecanoe Place&#8221; and serves delightful meals.   While our spouse ordered a classic Cob Salad, we selected chicken in a  pistachio crust.  Of course we decided later to duplicate that dish and  we think we have it ready to share with guests.</span></span></span></span></span></span></span></span></span></span></span></span></span></span></span></span></span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">Chop one cup of  shelled pistachios until they are like fine gravel (we don&#8217;t know how  else to describe them.)  Lightly pound four skinless, boneless chicken  breasts.  Dust each breast with flour, dip into two beaten eggs, and  then into the chopped pistachios.  Sauté in butter until browned on each  side.  Place into a 400 degree oven for 15-20 minutes until cooked  through.  Remove from the oven and cover with foil so they can rest.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">Melt  a tablespoon of butter in the pan in which you sautéed the chicken.   Add two tablespoons of flour and cook for 30-45 seconds.  Add a cup of  wine and a touch of salt.  When thickened, add any leftover pistachios.   When ready to serve (whipped potatoes and bright green broccoli as  sides) spoon a bit of the gravy over the chicken.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">We paired  this with Dr. Konstantin Frank&#8217;s 2007 Semi Dry Riesling.  Just a touch  of sweetness makes this a fine complement to the slight sweetness of the  pistachios.  There was a bouquet of flowers on the nose, and summer  fruit on the palate. There is just enough acidity to balance the slight  sweetness.  This is a wine we like well chilled.  Though  we couldn&#8217;t find the 2008 Dry Riesling which Salon.com&#8217;s Steven Kolpan  called &#8220;one of the best,&#8221; this was a lovely substitute.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">As a late summer dinner, we&#8217;ll be serving this again, even without an anniversary to celebrate.</span></p>

<p><span><span><span><span><span><span><span><span><span style="font-family: verdana,arial; color: #000000; font-size: medium;">So  many memories are sparked by food and wine.  It was only last year, at  this very time that we were in the south of France.  It was a memorable  vacation.  First there was Montpellier, a beautiful and energetic  university city with a vibrant night life that included a large wine  and food festival, as well as both indoor and outdoor orchestra  concerts. Then, we spent a week of our time on a luxurious canal barge  being fed by a Cordon Bleu trained chef, feasting also on the glorious  scenery and again drinking wonderful wines.  These memories  surface each time we pour the wines for guests at our son-in-law&#8217;s  gallery in the Argenta district of North Little Rock during the Third  Friday Art Walk.</span></span></span></span></span></span></span></span></span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">The wines, both red and white, are from the Cote  du Rhone.  La Chasse Du Pape &#8211; literally &#8220;the chest of the Pope&#8221; &#8211;  takes its name from the time when there were popes in 14th century  Avignon.  The red, which is as popular on a hot summer evening as on a  cold winter night, is a blend of Grenache, Syrah, Cinsault, and  Mourvedre.  The color is a rich ruby red, and on the nose there is red  fruit and herbs.  The palate reveals additional pepper and spice along  with a hint of vanilla.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">The white, which blends Grenache Blanc,  Bourboulenc, Clairette, and Roussanne grapes, is golden in color with a  bit of green shining through.  It looks like late summer to us.  There  is white fruit and citrus on the nose, and on the palate the flavors of  apple and pear emerge and remain through the finish.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">We chose  the white the other night to pair with a gratin of summer vegetables.   We sliced eggplant, tomatoes, and onions, and layered them in the  bottom of a greased gratin dish and added salt and pepper.  Grated  Gruyere topped the vegetables and then we repeated the process.  Finally  we whisked together 1 ½ cups of cream, a touch of nutmeg, and two eggs,  plus salt and pepper to taste.  This we poured over the vegetables.   Freshly grated Parmesan topped the dish before baking at 350 degrees for  about 40 minutes.  With a green salad and crusty bread it was  delicious.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">Even  without looking at our lovely pictures from that trip, memories of  beautiful scenery, good conversation, lingering meals on deck, are  evoked by the gratin accompanied by delicious French wine.  All it takes  a little food and a little wine and we&#8217;re on vacation again.</span></p>

<div><span><span><span><span><span style="font-family: verdana,arial; color: #000000; font-size: medium;">When you go out for dinner do  you usually choose to order the  same wine every time?  Many of us  do.  Our spouse and daughter are drawn to Pinot Grigio, as  are lots and lots of others apparently.  This is one of the  most popular white wines going.  We are not among those  who would order a Pinot Grigio when dining out, nor would we bring it  home.  That is until we tasted one from King Estates in  Oregon.</p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">A little confession is in order.  Since we are  strictly amateur in terms of our wine knowledge,  it came as a surprise when we were doing some research to discover that  the grape we had associated with Italy (spouse&#8217;s beloved home) is  actually from Alsace.  The grape is Pinot Gris, or gray  Pinot.  Obviously, it is related to the popular Pinot Noir. The skins of  the Pinot Gris grapes are separated early in the  fermentation process resulting in the delicate flaxen color.</p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">The  Pinot Gris we tasted is a 2007 King Estate.  Right  away we noticed aromas of pear and melon, and on the palate these were  joined by a hint of lemon and perhaps peach.  Somewhere in  there we found just a bit of spice and nice minerality.  The  wine has an elegant mouthfeel, and a lingering  finish.</p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">We think this wine would pair  nicely with the pork tenderloin we&#8217;ll be serving for dinner tonight. We  will sear the tenderloins over hot coals to give them some  color.  Then we will move them off the direct heat, lower  the cover, and leave them to roast for about 30 minutes.</p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">A  smoky flavor will season the veggies we cut into a large  dice, tossed in olive oil, and put into a grill pan over the coals  (before we added the pork).  When they begin to take on  color, we will transfer them to a baking dish and put them in the oven  to finish.</p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">The bread is from a fantastic NYTimes column from a  few  years ago.  It is long-rise, wet dough baked in a very,  very hot Dutch oven (500 degrees for 30 minutes).  Great  crust, great flavor.</p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">We will not be so hard on our spouse for her  dedication to  Pinot Grigio in future, but we will try to steer her toward Pinot Gris  from Oregon&#8217;s King Estate.  We&#8217;d recommend you get steered  in that direction, too.</span></span><br />

<p><span><span><span style="font-family: verdana,arial; color: #000000; font-size: medium;">We have a tradition in our family of  having pizza  every Sunday evening.  The tradition continues even now that our children have children.  It being summer, it just makes sense to bake the pizza on the grill.  Besides, we love the extra flavor the smoke gives the pizza.</span></span></span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">While we usually make our own pizza  dough, this  time we took a short cut and bought fresh dough at the market.  We  divided the dough into 8 equal parts and stretched each part into an 8 inch round. Meanwhile the grill (we are  old fashioned and use charcoal) was  ready and we banked the coals to one side.  We placed each round of dough, in turn, directly on the grill and let it  bake just a bit before removing it.  Now we were ready for the toppings.  Tomatoes (sliced) from the Certified Arkansas Farmer&#8217;s Market go on first, with a little salt  of course.  Then the cheese.  Making individual  pizzas gives us lots of options here.  We like gruyere, others like smoked Gouda, or even good old fashioned brick cheese.  Take  your pick.  Finally, sliced shitake mushrooms, and thinly sliced rings of red onion.  A splash of olive oil and the individual pizzas go back on the grill.  Cover  and grill for 3-5 minutes.  When finished, we like to top  with a salad of baby arugula that has been tossed in light vinaigrette.</span></p>
<p><span style="font-family: verdana,arial; color: #000000; font-size: medium;">We&#8217;re  still exploring Rosé and so that is what we  paired with our pizza.  We chose 2009 Anne Amie Cuvee Pinot Rosé from the Willamette Valley of Oregon.  The  delicate color is salmon pink.  The nose is floral with a  hint of strawberry.  On the palate it is like a summer bouquet of delicate roses and strawberries.  Dry,  gentle in the mouth, this is a delightful wine (good anytime, not just in the  summer).<br />
Pizza Sunday night? You bet!</span></p>
