Stay at Home Dinner

It’s Thursday already, and we feel as though the week has just begun. With the ministaffers out of school until today and our driveway iced over – we’ve had no contact with the outside world. That really impacts us getting out and trying new stuff!
But sometimes it’s just as nice to cozy up with the family and dig around in the fridge on days like we’ve had lately. So yesterday we did just that.
We took the carrots and broccoli that we had waiting for a dinner such as this and washed and cut them up. Then we put them in a steamer and steamed them with a bit of garlic.
While the vegetables were steaming, we took a rib-eye and coated it with Worchestire Sauce, salt, and pepper. Then we stuffed lumps of garlic in the various fatty portions of the meat.
We like to pan fry our steak in a cast iron pan. So we put on a bit of olive oil and added high heat. When the oil was ready, we dropped the steak in the pan. Ahh, the sound of that sizzle!
We like our steak medium rare. So our steaks tend to be thick – about an inch or inch and a half. That way, we know we can cook them on each side for 4-5 minutes and they’ll be perfectly done. But be sure that your oil is hot enough to blacken the outside of the meat.
When the meat is done, we place it under tin foil on a cutting board so it can soak in its juices while we get the rest of the meal ready.
We took the vegetables and added salt and butter to the garlic and tossed them well. This is so simple – yet one of our favorite side dishes! Add some crusty bread and some mashed potatoes and dinner is ready!
Yes, sometimes it’s the things beyond our control that force us to slow down and enjoy what we have right in front of us. Our ministaffers sure didn’t mind. In fact, they gobbled up their meal in no time flat!
